I’m sharing a great before and after kitchen remodel today from one of my Designed in a Click consultations.
This consultation was done about a year and a half ago, it takes awhile to remodel these days, you know! I was excited to receive these finished photos last week of their kitchen. They are really happy with their results and I can certainly see why.

design dilemma questions
1) How can I place my appliances, island and pantry so that I can efficiently use the space? (They didn’t need the desk anymore.)
2) What style new window and window treatments should I install?
3) Where should I end the backsplash?
They were going to keep the wood floor, but everything else would be new.
My response:
I think it will be most cost effective to try to leave the footprint the same, therefore I don't think you should modify the pantry. I do think you could do a more narrow island, something custom, to get more space there on both sides.
I also think you should relocate the fridge to the desk area and move the wall ovens to the space where you have the fridge. You get in and out of the fridge every day more often than you get into the oven, so that will keep your greatest activity over on that side of the island. Your cooktop could then be centered in the wall space there.
It looks like you have a standard depth refrigerator, I would definitely go counter depth. Even just a few inches helps on those and they feel more "built-in" looking. Your wall oven then will feel less intrusive over there than your fridge does now.
I think doing these changes will make you feel like you have more room and will give you a more functional kitchen without shaving off some of that pantry. It looks like a nice, roomy pantry, which is always nice to have.

If you feel like you want to investigate the pantry modification, then I'd move that wall back about one foot. It feels rather like it is encroaching on the kitchen alot, but again, you need to weigh the cost of the floor patching, sacrificing space in your pantry, etc.
If you did this, you could locate the door more to one side and do a barn door, that is rather nice for keeping a door swing out of the space. I see you have bi-fold doors there, I imagine they are a little cumbersome going in and out of all the time.
Here’s how the kitchen remodel turned out
They flipped the refrigerator and oven locations and shifted the cooktop down the wall a bit. That helps some with the busy cooking area of sink/cooktop/refrigerator on one side of the kitchen and leaves the slightly tighter side of the island with the pantry and ovens.
I love the taller windows and the cabinetry to the ceiling. It adds so much height and creates a really light, open feel in this kitchen.
The backsplash tile goes to the ceiling too, around the window and looks like they opted for the slab backsplash at the cooktop.
